1 eggplant, peeled & cut into inch pieces
1/4 c chopped onion
1/4 c chopped bell pepper
2 jalapenos, chopped (optional)
1/4 c chopped celery
1 T olive oil or butter
1/2 t both salt & pepper
2 slices bread torn into small pieces
1/2 soy milk (regular works too)
1 egg lightly beaten
1 T chopped pimento (optional)
1/4 t sage
3/4 c soy cheddar cheese (regular works too)
Preheat oven to 350 degrees. Saute first 5 ingredients in
olive oil or butter. Mix the remaining ingredients in a large
bowl and add sauted veggie mix. Mix well and pour into a
greased casserole dish and bake for 30-45 minutes.
